More stories about increasing prices on the horizon. The inflation we have been seeing for the past year is only the beginning. The president of Gristedes and D’Agostino Foods (A New York supermarket chain) thinks that food prices will rise dramatically in the next several weeks, and predicts a 10% increase in food costs over the next 60 days, just in time for the holidays.

No one can claim that the signs weren’t there, nor can they claim that they didn’t know this was coming. You were warned.

Well, the really good hamburger (93/7) at the local Target increased price again. Now its 7.25$ a pound. I’ve gone back to eating the (90/10) hamburger from Sam’s Club. Meat, one of my staples is slowly becoming unobtanium.

On a related note, I’m trying out a red beans and rice recipe tonight. I’ll let ya know how my blood sugar reacts. Looking forward to my first rice meal in months.

      I love red beans and rice too – but my sweetheart does not, and I’m pretty sure only one of the two live-in grandkids will eat it. The one that won’t is a hard-case picky eater. He’s literally starve than eat something that offends his tastebuds or his texture prejudices. Yeah, and I know that ultimately, that’s a self limiting problem, but I’d really rather not have him starve himself to death because he’s so stubborn.

      Any suggestions for other recipes based upon rice & beans (or suggestions for alternatives) would be appreciated. 😕

      Success! pre-dinner was 92. 90 minutes after eating it was 146. At 2 and a half hours it was 115. And that’s without exercise.

      Thank you again for reintroducing me to rice! This will seriously help out my food preps. I think my whole meal was less than 3 dollars, and I’ve got leftovers frozen for another dinner. Beats out that 7 dollars a pound for hamburger.

          I used a simple one. Just beans, onion, celery, and bell pepper with parboiled rice instead of white rice. I’ll try yours out next. I wanted to keep it simple and easy this first time.
