Its not perfect but check out a Pixel phone running GrapheneOS if you absolutely need a smart phone. REALLY cuts down on the corporate spying.

On android phones, you can switch off all sensors manually with a toggle in the developer options setting menu. This manually disables the microphones, inertial position sensor, cameras, and ambient light sensor.
